Raw Soup


In a Vitamix, blend until smooth.

Yield : 2 Quarts


4 cups cherry tomatoes cut in half

4 cups chopped strawberries

1 1/2 teaspoon salt

1/4 teaspoon black pepper

6 basil leaves

1 tablespoon balsamic vinegar

1/4 cup lemon juice

   Add  1/4 cup olive oil while blending to emulsify.

Garnish with thinly sliced strawberries and cherry tomatoes and drizzle with ricotta and basil.
