I Am Generous

Summer Squash


1/2 cup of olive oil

Add and sautee for a few minutes until softened:

1 cup of chopped onion


2 bay leaves

1 jalapeno, finely chopped

Cook for 5 minutes, then add:

 3 Q diced summer (yellow) squash

1 teaspoon of salt

Cook slightly covered until the squash has given off all of its water and is well cooked.               


3/4 cups of white wine

Allow the alcohol in the wine to cook off for a few minutes then add:

1 bach cilantro, rough-chopped

Remove heat and cool.
